Poached Eggs, Ham and Chilli Mayo Muffin
- 2 eggs
- 1 english muffin
- 2 slices Fireside Glazed Ham
- tablespoons mayonnaise
- ½ teaspoon Naga Chilli Sauce
- few snips of chives
In a small bowl, mix together the Naga Chilli Sauce and mayonnaise.
Slice the muffin in half and toast. Poach the eggs to your liking and drain off any excess water.
Place the ham on both muffin halves, then top each with eggs, a dollop of the chill mayonnaise and sprinkling of chives.
