Salmon Salad

TIME: 25 mins | SERVES: 2
INGREDIENTS:
  • 7 oz salmon fillet
  • 1 bag of mixed leaf salad
  • half a cucumber, sliced
  • 1 tablespoon Mild Chilli Jam
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 1 pinch of sea salt

Method:
Preheat oven to gas mark 7/ 220°C/ 425°F.

Put the salmon on a baking tray and sprinkle with salt. Pour the Mild Chill Jam over the salmon.

Place the salmon in the oven and cook for fifteen to twenty minutes. Once cooked, take the salmon out of the oven and leave to cool.

In a jug, mix together the oil and lime juice.

Place the mixed salad on a plate, pour over the dressing and mix through. Flake the salmon and scatter on top.
