Wiltshire Chilli Farm – Trinidad Scorpion Baked Eggs

Spicy Shakshuka

Serves 1


  • 200g tinned chopped tomatoes
  • 2 eggs
  • 1 tablespoon olive oil
  • 2 teaspoons Trinidad Scorpion
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ onion
  • ¼ red bell pepper
  • ¼ green bell pepper
  • ¼ yellow bell pepper
  • pinch of sea salt
  • pinch of sugar
  • fresh parsley or coriander to garnish


Place the oil, onion, bell peppers, cumin, paprika, salt and sugar in a skillet (or oven proof pan) and fry for 5 minutes. Add chopped tomatoes, stir.

Make two craters in the sauce and crack an egg into each crater.  

Transfer pan to the oven, gas mark 6 and cook for 10 minutes or until the eggs are cooked to your liking. Sprinkle parsley on top for garnish. Serve with some crusty bread to mop up the sauce.
