Grilled Lamb Chops
Pre-heat oven to gas mark 8/230C
Place the red peppers, onion and garlic on a baking tray, drizzle with olive oil and some of the Chipotle Chilli Salt. Bake for 20 minutes; reduce heat to gas mark 6/200C and cook for 20 minutes. Remove from oven and cover with foil, rest for 20 minutes.
After 20 minutes remove the foil, and peel the skins off of the red peppers, onion and garlic.
Place the vegetables (along with their juices) into a blender along with the other red pepper sauce ingredients and blitz until smooth.
Place the lamb chops in a bowl and rub with the Mediterranean Rub and olive oil. Marinate for an hour.
Heat a griddle pan to medium high, add the lamb chops and cook for 3 minutes on both sides, or longer depending on the thickness of the lamb and if you like them well done. Serve with the red pepper sauce drizzled on top.
